Most often I see that DME = 'dry malt extract' but some people (bakers mostly) translate DME = 'diastatic malt extract'. My understanding is that the enzymes in the malt or LME will convert some of these starches into sugar during the malting process. Many use adjuncts like corn or oatmeal that are not malted. Right now I'm looking at putting together an all-grain or partal-mash gear and I've been looking at recipes.
